Ad Hoc Gluten-Free Pancake & Waffle Mix

Gluten free breakfast for champs!!
My (very very soon to be) Mother-in-Law got me an awesome collection of gluten free baking goods from Williams-Sonoma for the holidays. Just in time, too! I'm in the home stretch of training for a marathon and I don't know about you, but me, I crave pancakes or waffles and some scrambled eggs after a long run. I picture the syrupy goodness at the finish line.
When we got home from our long run last week I was SO excited to break out my new Ad Hoc gluten-free pancake and waffle mix. It was really easy to prepare (good thing because I was starving), just add butter (I actually used Brummel & Brown and it worked fine), an egg and some almond milk. Voíla!
The pancakes turned out delicious! Much better than the gluten-free Bisquick mix. They were extremely light and fluffy and cooked really nicely. So delish and "real" pancake-like. Tomorrow morning = 16 mile run plus another mountain of pancakes! See, motivation.
