Ma's Apple Cake Recipe

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 tsp gluten free vanilla extract
  • dash of salt
  • splash of orange juice
  • 1 cup all-purpose gluten free baking flour
  • 1/2 cup vegetable oil
  • 6-8 sweet apples cut into small chunks. I leave the skin on.
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp all spice

Directions

  1. Beat eggs, add sugar and stir well. Add vanilla, salt, oj, flour and oil. Mix with electric mixer (or by hand) until mixture is well blended and slips off the blades or spoon easily. Set aside to 'set' while preparing apples.
  2. Core apples and cut into small pieces. Mix apples with brown sugar, cinnamon and allspice. if mixture seems too wet, you can place the apples in a colander to 'drain' them a bit. Spray 8 x 8 glass baking dish with cooking spray. Spread apple mixture into dish. Gently add the dough mixture over the apples, going back and forth in lines until the bowl is emptied. (this just makes sure you don't clump the dough in one area).
  3. Sprinkle a little bit of cinnamon on top of the dough! Bake for 1 hour, or until the top is crisp and the center of the dough is done.

    Enjoy! *You can add chopped walnuts, blueberries....

    *freezes easily and tastes yummy warmed up and served with gluten free sorbet (or ice cream....)
